Weekly Meal Plan #1

Following the success of our meal planning masterclass and weekly recipes, I am often asked what we actually eat each week. So I thought I would revive the weekly meal plan which we haven't featured for a long time.  We're on a mission to eat better this year, having got into a few bad habits over the past few months.  So there's lots of good stuff going on in our kitchen, and everything is being liberally sprinkled with chia, sesame, sprouts and seeds, with sides of kimchi and sauerkraut.  #teamhealthy, right?!  Here's what we'll be eating this week...


Monday

Breakfast: pancakes with Greek yogurt and berries

Lunch: falafel with couscous salad, hummus and pitta bread

Dinner: vegetable enchiladas with rice, refried beans, salsa and guacamole


Tuesday

Breakfast: pancakes with Greek yogurt and berries

Lunch: rye bread with cream cheese, salad and sauerkraut

Dinner: chick pea curry with steamed spinach and brown rice


Wednesday

Breakfast: granola with plain yogurt and frozen berries

Lunch: chestnut, carrot & lentil soup topped with pumpkin seeds, granary rolls

Dinner: veggie burgers, griddled halloumi and courgette, potato wedges, salad


Thursday

Breakfast: grapefruit, toast with peanut butter

Lunch: quinoa and puy lentil salad

Dinner: vegetable chilli with brown rice, fresh guacamole and tomato salad


Friday

Breakfast: granola with plain yogurt and frozen berries

Lunch: leftover chilli with flatbread and salad

Dinner: veggie hotpot with steamed broccoli, spinach and asparagus


Saturday

Breakfast: grapefruit, toast with peanut butter

Lunch: hummus club sandwich

Dinner: make your own pizzas, salad


Sunday

Breakfast: pastries and fruit platter

Lunch: pitta with hummus, tzatziki, olives and salad

Dinner: penne with peppers, capers and olives, large green salad


Baking, Desserts & Snacks

Gingerbread (wo)men
Lime shortbread
Petits filous fromage frais
Fruit


Spend: Sainsbury's delivery today £179.10, first since Christmas, which includes quite a lot of staples that had run out etc.

  1. Oh your meal plan sounds delicious, I love how you have planned breakfasts and lunches, extra organised :). I love the sound of the veggie burgers and the veggie hotpot :)

    1. Thank you. Have to have everything planned then I can do the online shop, and forget about it all. More brain space freed up for other detritus!
