Weekly Meal Plan #4

We're big on the comfort food this week, in that yucky time between deepest winter and proper spring.  The bulbs have all thrown up shoots and some are starting to bud well though, so it can't be too far away.  It seems odd to think that last January was so mild there were daffodils everywhere.  Thankfully, it is Lara's birthday at the end of this week, so we have a cheery weekend to look forward to, a brightness on the horizon of grey!


Monday

Breakfast: roasted plums, granola and yogurt


Dinner: pasta pesto with green vegetables

Tuesday

Breakfast: berry compote, pancakes & yogurt

Lunch: chunky vegetable and bean soup*

Dinner: Sri Lankan curry with brown rice*

Wednesday

Breakfast: roasted plums, granola and yogurt

Lunch: leftover soup

Dinner: veggie fried rice with tofu




Thursday

Breakfast: fresh fruit platter

Lunch:  tricolore salad

Dinner: lentil shepherd's pie with mashed veg topping

Friday

Breakfast: pastries, fresh fruit platter

Lunch: vegetable couscous with falafel

Dinner: veggie fajitas, chopped salad, salsa and guacamole

Saturday

Brunch: cooked breakfast

Dinner: bean burgers, sweet potato wedges, fresh slaw and mini corn cobs

Sunday

Breakfast: strawberry buckwheat pancakes with Greek yogurt & berries*

Lunch: avocado on rye bread, salad

Dinner: smoky veggie chilli with cheesy jacket potatoes*
