Weekly Meal Plan #6

Last week's sunshine almost convinced me to put picnics into this week's meal plan, but lots of sea mist over the past few days has slightly put paid to that idea.  You never know, there may be more spring sunshine this week - fingers crossed!  So we have a few pack-uppable lunches on this week's plan, just in case, but also lots of comfort food dinners, should it stay cold and grey.  That in-between time of year, eh?


Monday

Breakfast: granola, yogurt and berries

Lunch: home-made baked beans on toast

Dinner: halloumi, lemon and pear salad

Tuesday

Breakfast: croissants and berries

Lunch: spinach rarebit toasts

Dinner: baked celeriac, marinated beetroot, kale & quinoa salad

Wednesday

Breakfast: pistachio, oat & cranberry pancakes

Lunch: pesto salad

Dinner: mushroom Bolognese pasta


Thursday

Breakfast: pistachio, oat & cranberry pancakes


Dinner: stuffed red onions with salad and broccoli

Friday

Breakfast: fruit compote, granola and yogurt


Dinner: make your own pizzas

Saturday

Breakfast: home-made waffles

Lunch: mezze spread

Dinner: curry and chana dhal with mushroom rice

Sunday

Breakfast: home-made waffles

Lunch: baked sweet potatoes

Dinner: vegetable quinoa with falafel


Baking: celeriac & walnut muffins, apricot loaf cake

  1. Ahh! Last week was lovely weather wise wasn't it...It isn't looking too good up here in the north east this week. Hmmf.

    1. Thank you. Hope the weather gets better soon, we seem to veer from bleak midwinter to just about spring on a daily basis here!
