Weekly Meal Plan #7

First of all I'd like to say a big thank you to all the lovely people who are reading these weekly meal plans, taking inspiration, and also commenting on how delicious it all sounds. You're very kind, but please don't assume we have some superior cooking ability.  I was shocked by some of the comments that came out of our work with Prestige, sponsors of Secret Chef, recently.  So many people really feel that they can't cook, that it is completely beyond them, but I promise it is possible, and enjoyable.  Start with something simple like this chickpea curry and you'll be amazed what you can do.  Honest!  So, here's this week's meal plan...


Monday

Breakfast: fresh fruit platter

Lunch: quinoa salad

Dinner: chickpea curry with steamed purple sprouting broccoli and brown rice

Tuesday

Breakfast: banana bread

Lunch: Russian salad with potatoes

Dinner: rice and steamed vegetables with radish & cucumber pickles

Wednesday

Breakfast: fresh fruit platter

Lunch: sweet potato wedges, dips and BIG everything in salad

Dinner: sunblush tomato pasta


Thursday

Breakfast: banana bread

Lunch: falafel, hummus, tzatziki, pitta bread and salad

Dinner: veggie sausage and potato traybake

Friday

Breakfast: granola with yogurt

Lunch: warm potato salad

Dinner: pizza

Saturday

Breakfast: banana pancakes

Lunch: sandwiches

Dinner: chickpea, roast shallot & feta salad

Sunday

Brunch: cooked breakfast

Dinner: quesadillas with salad and re-fried beans


Hopefully that will keep the gannets going this week!  Last week we completely ran out of anything for breakfast by Saturday - had to grab toaster bread out of the freezer and plonk chocolate spread on it, we didn't even have any butter.  Epic fail.  Ah well, they survived - and were more than happy to devour Nutella-smothered toast, of course!

  2. I am a rubbish cook but I still meal plan....lol
    hehehe I have some weeks no matter how much I buy my girls go through it so quickly.
    Fab meal plan. I really want that chickpea curry now! x
