Weekly Meal Plan #8

Just as I was saying it's not always perfect Paradise here in meal planning land last week, we had a rebellion on our hands!  Lara was not happy about some of the meal choices this week, and got rather vocal about it (parental understatement!) So, this week has been mostly planned by Lara, although I may have shoehorned in a couple of more nutritious dinners.  Shhh...



Monday

Breakfast: fresh fruit platter

Lunch: humus with pitta bread and crunchy vegetables

Dinner: beetroot burgers with potato wedges, spinach and salad


Tuesday

Breakfast: fresh fruit platter

Lunch: couscous salad with sauerkraut

Dinner: veggie rice bowl


Wednesday

Breakfast: pancakes with berries and Greek yogurt

Lunch: vegetable and halloumi skewers with salad and fresh focaccia

Dinner: aubergine and chick pea madras


Thursday

Breakfast: pancakes with berries and Greek yogurt

Lunch: falafel with tzatziki, pitta and salad

Dinner: pesto pasta with green vegetables


Friday

Breakfast: pastries and fruit

Lunch: tricolore salad

Dinner: beetroot and butter bean casserole


Saturday

Breakfast: pastries and fruit

Lunch: tabbouleh

Dinner: veggie paella


Sunday

Breakfast: toasted bagels with peanut butter

Lunch: mushroom and chive omelette

Dinner: chickpea salad


Baking: strawberry & vanilla cupcakes, chocolate cake
