Weekly Meal Plan #12

Back to normal this week after our holiday, so I'll be grabbing a large bag of chilli out of the freezer when we get home on Monday, then biding our time till Sainsbury's bring the necessary on Tuesday morning!  Planning lots of salads, make ahead and laidback, easy food this week; early summer and the living (cooking) is easy!


Monday

Breakfast: out

Lunch: out

Dinner: three bean chilli with brown rice

Tuesday

Breakfast: eggs Florentine with asparagus

Lunch: rye with avocado, tomatoes, basil and olive oil

Dinner: chickpea curry, dhal and naan bread

Wednesday

Breakfast: fresh fruit platter

Lunch: griddled asparagus with Parmesan, spinach and rocket salad

Dinner: vegetable stir fry with tofu

Thursday

Breakfast: toast with peanut butter and banana

Lunch: mixed bean salad

Dinner: quinoa with roasted vegetables, walnuts, pine nuts and pomegranate


Friday

Breakfast: granola with natural yogurt and berries

Lunch: watercress salad with asparagus

Dinner: black bean chimichangas with re-fried beans, rice and salad

Saturday

Breakfast: toast with peanut butter and banana


Dinner: roasted vegetables and halloumi

Sunday

Breakfast: granola with natural yogurt and berries


Dinner: jacket potatoes with cheese and beans (girls)/sour cream and chives (grown-ups) with salad and sauerkraut
