Strawberry & Granola Trifle

We love this delicious (mostly) healthy dessert, which uses delicious healthy granola, cream, yoghurt and fresh strawberries.

This easy no bake dessert is perfect for throwing together for a quick lunch time dessert, or a light after-dinner treat.

It's a bit like Scottish cranachan, but a luxe version - without the whiskey!

Strawberry & Granola Trifle

Serves 4


250g fresh strawberries
200g granola
50g peeled pistachio nuts
200ml double cream
200ml Greek yoghurt
2 tablespoons sugar
2 teaspoons vanilla sugar
Fresh mint to garnish, optional


1. Roughly chop the strawberries.  Chop the pistachio nuts finely.

2. Mix the granola and pistachio nuts together.

3. To make the yogurt mousse, whip the cream and season with sugar and vanilla sugar.  Fold the yogurt lightly through the whipped cream.

4. Layer the strawberries, granola-pistachio nut mixture and yogurt mousse in serving glasses.  Garnish the portions with fresh mint and serve immediately.
