Easter Biscuits #cookingwithkids

A lovely easy recipe to try with the kids this holiday.  And if they, or you, don't like the spice or the currants, you can always leave them out or only add them to half the mixture.  I promise I won't tell!


Easter Biscuits

Makes approx. 24

Ingredients

280g plain flour
1 tsp baking powder
125g unsalted butter, cut into small cubes
100g caster sugar
45g currants
1/4 tsp mixed spice
Zest of a small unwaxed lemon (approx. 2 tsp)
1 egg

Method

1. Pre-heat the oven to 180C.  Grease and flour two baking trays.

2. Sift the flour and baking powder into a mixing bowl.

3. Rub the butter in until it resembles fine breadcrumbs.

4. Add the sugar, currants, mixed spice and lemon zest.  Mix well.

5. Lightly beat the egg, then add to the dry ingredients, mixing to form a stiff dough.

6. Lightly flour a board or worktop, turn the dough out and roll to 4mm thickness.

7. Cut out Easter shapes (bunnies, eggs, chicks) or 6-7cm circles, then place the biscuits on the baking tray, leaving a gap between each.

8. Bake for 20 minutes until lightly browned.

9. Remove from the oven.  After 5 minutes, transfer to a wire rack to cool.
