Halloumi Open Sandwich

A quick and delicious lunch idea for you today.  The lime adds a lifting element to the halloumi, which combines deliciously with the hummus.  This is my go to lunch on a work day.  Perfect for when I've managed to get everyone else out of the house and am on a mission to conquer my to do list.  Filling, quick and tasty.  Enjoy!

Halloumi Open Sandwich


3 slices of halloumi cheese
1/2 a lime
1 slice of sourdough bread
1 tablespoon of red pepper hummus
1 preserved red pepper from a jar, drained well
a small handful of rocket leaves


1. Place the halloumi slices in a dry griddle or frying pan, and cook over a moderate heat till golden brown, turn after a couple of minutes to cook the other side.

2. Meanwhile, toast the sourdough slice, then spread with the hummus.

3. Remove from the pan, place on a plate and squeeze a little lime juice over.

4. Place the rocket and pepper on top, then top with the halloumi.  Enjoy!
