Easter M&M Cookie Bars Recipe

These pretty cookie bars are a delicious Easter treat for kids or the whole family.  They will look gorgeous on your Easter dessert table, or could even be wrapped up as Easter party favours.  They're easy to make so get the children involved in some fun cooking - as long as they get to eat the end results, they'll be happy!  These yummy cookie bars won't be around for long.


Easter M&M Cookie Bars

Ingredients

1 cup butter room temperature / 225g
1 1/4 cup brown sugar / 275g
1/2 cup granulated sugar / 100g
1 packet pudding mix / c. 96g - you can make your own pudding mix here
2 eggs, beaten
2 teaspoons vanilla extract
3 cups flour / 375g
2 teaspoons baking soda
1 teaspoon salt
1 bag Easter (pastel) M&M’s


Method

1. Preheat the oven to 350°F / 180C.  Grease and line a 1 inch baking pan.

2. Add the butter, brown sugar, granulated sugar, pudding mix, eggs and vanilla extract to a large bowl.  Mix well.



3. Add the flour, salt and baking soda.  Mix thoroughly.



4. Spread mixture into a greased or silicone baking pan.


5. Sprinkle the M&M's across the top and bake for 20-25 minutes.


6. Remove and leave to cool in the pan slightly, then transfer to a wire tray to cool completely.
