This delicious cake/bread is a staple in our house - snacks, breakfast, afternoon tea, it suits any time of day, and goes very, very quickly...
250g plain flour
2 tspn baking powder
125g unsalted butter
250g caster sugar
4 ripe bananas, mashed
2 eggs, lightly beaten
1 tspn vanilla extract
175g chocolate drops
Sift flour and baking powder. In a mixing bowl, combine the butter, sugar, banana, eggs, vanilla extract and choc chips. Add to the flour and stir to combine; don't over mix the batter.
Pour the mix into a loaf tin and bake at 180C for 1 hour 15 minutes. The loaf should be light brown with a slight crust. Use a skewer to check it is cooked through though. Leave in the tin to cool for 5 minutes then turn out.
