Instant Pot Disney Frozen Inspired Bundt Cake Recipe

For anyone who wants to make cake as easily as possible the Instant Pot is an absolute godsend!  This easy recipe jazzes up a simple cake mix then bakes it in the Instant Pot using a Bundt pan.  Add some simple vanilla frosting, or even swirl it to create an ombre effect on the outside that echoes the contrasting blue and white effect on the inside.  Perfect for afternoon tea, a Frozen party, a birthday, or best of all, just because!

Instant Pot Frozen Inspired Bundt Cake

Ingredients

1 box French vanilla cake mix or make from scratch with this recipe
3 eggs
1 cup / 235ml water
1/3 cup / 80ml vegetable oil
Sky blue gel food colouring
Blue and white sprinkles

Method

1. Mix together the vanilla cake mix, eggs, water, and oil in a large bowl.

2. Divide the batter equally between two bowls.

3. Mix a few drops of sky blue gel food colouring into one of the bowls.

4. Grease and flour a 7 inch Bundt pan.

5. Pour half of the white batter into the Bundt cake pan.


6. Drop scoops of the blue cake batter into the white batter.


7. Pour remaining white batter onto the blue batter.

8. Drop dollops of the remaining blue batter onto the top.

9. Swirl the two batters together without fully blending the two.


10. Add 1 cup / 235ml water to the inner bowl of the Instant Pot.  Place trivet inside.

11. Make a foil sling and carefully lower the filled Bundt pan on top of the trivet in the Instant Pot. Loosely fold foil sling over the top of the Bundt pan.

12. Close lid and set to sealing.  Cook on high pressure for 35 minutes.  Then use the quick pressure release.


13. Remove from the instant Pot and allow to cool on a cooling rack for 30-60 minutes.

14. Use a knife to gently separate the cake from the sides of the Bundt pan and empty the cake onto a plate.

15. Frost as desired and sprinkle the sprinkles over.
