Flamingo Cupcakes Recipe

These stunning, and super cute, flamingo cupcakes look amazing but are fairly easy to make.  This easy flamingo cupcakes recipe is perfect for a flamingo-themed birthday party, or perhaps a pink girly baby shower?  I am totally behind the evolution of all things flamingo from kitsch to trendy, and when they arrive in cupcake form all the better!


Flamingo Cupcakes

Makes 12 cupcakes

Cupcake Ingredients:

1/2 cup butter, softened to room temperature / 115g
1 cup granulated sugar / 200g
2 eggs, beaten
1 1/2 cup flour / 190g
2 tsp baking powder
1/2 C. milk / 125ml
2 tsp vanilla extract

Frosting ingredients:

3 cups powdered sugar / 300g
1/3 cup butter, softened to room temperature / 75g
2 tsp vanilla extract
1-2 tbsp milk
Pink gel food colouring

You will also need:

Pink cupcake liners - you could even double them up as we have with these spotty liners too
Reusable piping bag
Star frosting tip
Wilton Flamingo Icing decorations or you can buy similar on Amazon
Pink gel food colouring
Toothpicks

Method

1. Preheat the oven to 350 degrees F (175C) and line a 12 count muffin tin with cupcake liners.

2. Cream the butter and sugar, then add the eggs.  Fold in the flour and baking powder, then add the milk and the vanilla extract, mixing well.

3. Fill each cupcake liner about 2/3 full with batter.

4. Add 1-2 drops of pink gel food coloring to the remaining batter and mix well.


5. Add about 1 tablespoon of pink batter to the top of the white batter in each cupcake liner.


6. Use a toothpick or cocktail stick to gently swirl the pink batter into the white batter.


7. Bake for 18-20 minutes. Insert a toothpick around 18 minutes. If it comes out clean, the cupcakes are done.

8. Remove the Cupcakes from the oven and let cool completely.


9. To make the frosting, combine the powdered sugar, butter, vanilla extract and milk to get a good piping consistency.

10. When the frosting reaches your desired consistency, add a few drops of the pink gel food colouring and stir to combine.

11. Attach the star frosting tip to the piping bag and fill with frosting.  Gently squeeze the frosting out of the piping bag in a circular motion to ice each cupcake.


12. Repeat with the remaining cupcakes then add a Flamingo to each before the icing sets.
