Baked Cinnamon Apple Crisp Recipe

This classic recipe will be a big hit with your family this weekend, and perfect for Father's Day coming up next month!  One taste of this delicious dessert and you won't believe it is both gluten and refined sugar free. The addition of fresh thyme adds a subtle savoury note to the otherwise sweet flavour profile of this classic recipe.  Try it, you'll be pleasantly surprised!


A quick cook's tip, choose firm apples such as Granny Smith or Pink Lady (pictured here) for this recipe.  These varieties will hold up well to the heat of baking without turning to mush.  Using sharper sour cooking apples cuh as Bramleys would necessitate the use of refined sugar, so are better avoided.

We used the Wilton 8 inch square cake pan to make this and it turned out perfectly.

Baked Cinnamon Apple Crisp

Serves 4-6

Ingredients

6 large apples, cored, peeled, and sliced
1 Tablespoon fresh lemon juice
1/3 c. (110ml) real maple syrup
2 Tablespoon 100% apple juice (sugar free)
1 teaspoon ground cinnamon
½ teaspoon ground allspice
1½ teaspoon fresh thyme leaves (optional)
¼ teaspoon salt


Topping Ingredients:

1 c. rolled oats / 100g
1/3 c. almond flour / 32g
1/3 c. sliced/slivered almonds / 37g
1/3 c. honey, preferably local / 113g
3 T. unsalted butter, melted / 43g


To serve:

Vanilla bean ice cream, freshly whipped cream or custard

Method

1. Place top oven rack in the centre position and pre-heat the oven to 350°F / 175C. Grease an 8” x 8”  (20cm square) baking dish and set aside.

2. Place apples in a large non-reactive bowl and toss with fresh lemon juice. Add the maple syrup, apple juice, cinnamon, allspice, thyme leaves if using, and salt. Toss to combine and set aside.


3. Combine the topping ingredients in a separate bowl and stir until oats are thoroughly coated and all ingredients are well combined. Set aside.


4. Pour the apple mixture into a prepared baking dish and spread into an even layer. Then spread the topping evenly across the top in a uniform layer.


5. Bake for 30 minutes. If the top layer is nicely browned, cover the dish loosely with aluminum foil to prevent over-browning. Continue baking for another 15-20 minutes or until the apple crisp is nice and bubbling. Remove from the oven and set aside to cool for 5-10 minutes.


6. Serve warm with some vanilla bean ice cream, freshly whipped cream or custard, if desired. Enjoy!
