Cheese, Chilli & Avocado Thins Sandwich Recipe

I don't know about you, but I am suffering from a distinct lack of sun at the moment, so this bright and breezy lunchtime sandwich, with more than a nod to spring is just the ticket.  The zing of chilli is also the perfect antidote to all the rich food of the past fortnight.  Enjoy!


2 ripe avocados
2 tbsp light mayonnaise
2 tbsp Cooks’ Ingredients Hot Chilli Sauce
Pack of 6 sandwich thins
150g mature Cheddar cheese, grated
50g watercress, thick stalks removed


1. Mash the avocado flesh with the mayonnaise and chilli sauce.  Spread on each sandwich thins in place of butter.

2. Sprinkle the cheese over the bases, and add the watercress. Top with the lids and serve.
