Zingy Spinach Salad with Citrus Dressing

Yay, salad season!  The zesty dressing brings this simple salad to life, and makes it the ideal accompaniment to a wide variety of dishes.  We like it with falafel and pitta bread as an easy summer lunch or light dinner.

Zingy Spinach Salad


60g spinach
2 large tomatoes
¼ of a cucumber
30g Parmesan, chopped

For the dressing:

3tsp Yuzu Citrus Seasoning
1 tbsp sugar
1tsp mirin
1 tbsp rice wine vinegar
1tbsp extra virgin olive oil


1. Place the spinach in a large bowl.  Slice the cucumber and cut the tomatoes into thin wedges.  Scatter over the spinach.

2. Mix the other ingredients together in a clean screw top jar or bottle.  Pour dressing over and serve.
