Smoked Tofu & Watercress Cannelloni

This delicious vegan pasta dish is ideal for a tasty supper or a luscious lunch.  The perfect comfort food dish for autumn or winter, served with roasted vegetables.  It also works well as a light dish for spring and summer suppers, served with a colourful mixed salad or a salad with a citrusy dressing to match the cannelloni's delicious smoky finish and peppery kick.


Smoked Tofu and Watercress Cannelloni

Serves 4

Ingredients

2 red onions, peeled and diced
2 cloves garlic, finely chopped
2 tsp dried thyme
225g spinach
225g watercress
2 packs smoked tofu
1 tsp smoked paprika
20 tubes of dried cannelloni pasta
2 tins chopped tomatoes
Salt and pepper
Vegetable oil

Optional

75g melting vegan cheese, grated - try Violife cheddar flavour block

Method

1. Preheat the oven to 180°C.  Grease an ovenproof dish.

2. Heat the oil in a large frying pan over a medium heat.  When the oil is hot, add the chopped red onions with a pinch of salt.  Fry for a few minutes then add the garlic and 1 tsp of thyme.

3. Stir through and fry for another minute.  Add the spinach and watercress for 30 seconds or so to wilt it.  Transfer to a large bowl.

4. Drain the tofu and mash well with a fork.  Add the paprika and a good pinch of salt. Mix well.

5. Add the tofu to the  watercress and spinach mix, then combine thoroughly.  Taste and adjust seasoning if necessary.

6. Take a piping bag with no nozzle fitted and spoon in the watercress and tofu filling.  Pipe the mixture into each cannelloni tube.

7. Place the tubes in a single layer in a large ovenproof dish.  Pour over the tinned tomatoes and sprinkle with the remaining thyme and some black pepper.

8. Scatter over the vegan cheese (if using) and place the cannelloni into the oven for roughly 35 minutes, or until the cheese is bubbling and the filling is hot in the middle.

9. Remove from the oven and leave to rest for a few minutes before serving.
