Cadbury Creme Egg Cookie Bars Recipe

If you're like us you can't get enough of Cadbury Creme Eggs in their short window of availability.  Today we have another delicious cookie bar recipe for you using those yummy Creme Eggs.  It's a two step recipe, making your own cookie mix but also using a brownie packet mix.  Of course, you could also make your own brownie batter too.


Cadbury Chocolate Chip Cookie Bars

Ingredients

1 stick unsalted butter (115g)
1/2 cup white sugar (105g)
1/2 cup brown sugar, packed (100g)
1 egg
1 teaspoon vanilla extract
1 cup + 2 tablespoon flour (145g)
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips (175g)

1 box of brownie mix (+ eggs, oil and water for the brownie mix)

For topping:

10 Cadbury Creme Eggs
1/4 cup of pastel M&Ms (45g)

Method

1. With an electric mixer, cream the butter with both sugars in a small mixing bowl.


2. Add egg and vanilla extract then cream again until smooth.


3. Add the flour, baking soda, and salt.  Stir gently until incorporated.


4. Stir the chocolate chips through.


5. Store in the refrigerator until ready to use.

6. Preheat the oven to 350 degrees (175C)

7. Prepare the brownie batter as directed, then pour the batter into a 9"×13" baking dish.


8. Scatter pieces of your cookie dough over the top of the brownie batter.


9. Bake for 35-40 minutes, covering with foil if you need to keep the cookies from getting too brown on top.

10. While the batters are baking, halve your Cadbury Creme Eggs then set aside.

11. Remove the cookie bars from the oven, then quickly place the halved Creme Eggs and the M&Ms on the top.


13. Leave to cool on a wire rack for 15-20 minutes then cut into pieces for serving.
