How to Make the Most Delicious Chocolate Toffee Popcorn

This delicious chocolate toffee popcorn is the best thing for your next family movie night!  The best thing about flavouring your own popcorn is you know exactly what's going int it - not an E number in sight!  Plus making it is super fun, especially if the whole family gets involved.  Then all you have to do is sit down and eat it!  Did I mention this tastes way better than anything you'll ever buy in the store or at the cinema?  YUM!!!


Chocolate Toffee Popcorn

Ingredients

1 cup of popcorn kernels made per instructions or follow this guide
1 cup butter (225g)
2 c light brown sugar firmly packed (200g)
1/2 c light corn syrup (7 tbsp golden syrup in UK)
1/2 tsp salt
1 tsp baking soda
3 tsp vanilla extract
1 c semi-sweet chocolate chips (can use 175g milk chocolate broken up)
3/4 c toffee bits (95g toffee pieces)


Method

1. Preheat oven to 225 degrees F (110C / 100C Fan).

2. Put the popped popcorn in a pan large enough to allow the popcorn and the topping to be stirred together.

3. Melt the butter, brown sugar, salt and corn syrup (golden syrup) in a medium-sized saucepan.


4. Stir frequently over medium heat until the mixture comes to a full boil. Continue to stir and cook for 5 more minutes.

5. Remove from the heat and add the baking soda and vanilla, stirring well.

6. Pour the mixture over the popcorn and stir well to coat all of the popcorn.


7. Bake for approximately an hour or until the popcorn is crunchy.  For best results stir the mixture every 15 minutes.


8. Spread the popcorn out onto parchment paper or onto a larger tray and allow to cool completely.

9. Heat the chocolate chips in the microwave for 30 seconds at a time, stirring after each 30 seconds until chips are melted.  You could also heat the chocolate in a bowl over a pan of simmering water on the stove top.  Do not allow the bowl to touch the bottom of the pan or the water to get into the bowl.

10. Drizzle the melted chocolate over the popcorn.  Sprinkle with toffee chips.

11. Allow the chocolate to firm up before storing.  Eat immediately or store in an airtight container for up to a week.
