Chocolate Cashew Pomegranate Drops

It's time to start planning your favourite Christmas chocolate treats.We always spend a lot of time baking up holiday treats during November and December. And this recipe is too simple - and yummy - to pass up.

I'm all about doing minimal work for a recipe that provides a huge flavour! And I don't even have to worry about turning on my oven for these, either!

Truth be told, the hardest part of this recipe is having the patience to wait while you're letting it harden up in the fridge.


I might be guilty of being a little too impatient waiting for these treats to firm up, but it's just because these little bite size treats of good taste are too good to pass up.

Once the kids see that this treat is covered in chocolate, they're not going to be able to deny them.

And little will they know that they're filling their tummies with healthy fats from the cashews and natural sweetness from the pomegranate seeds. Win!

Chocolate Cashew Pomegranate Drops Recipe

Ingredients

1 cup of melted chocolate (this is about 1 ½ cups of chocolate chips or 250g chocolate, melted)
Seeds from ½ a pomegranate (about ½ a cup of seeds / 90g)
 ¼ cup of raw cashews / 40g


Instructions

1. Remove the seeds from the pomegranate. The easiest way to do this is to cut the pomegranate in half and smack the back of it with a wooden spoon to release the fruit.

Another way to release the fruit is to quarter the fruit and then spread the skin to release the seeds.

2. Melt the chocolate in a heatproof bowl over a pan of water, or in the microwave.

3. Use a teaspoon to drop the chocolate onto parchment paper.

4. Sprinkle the seeds and cashews onto the chocolate drops.


5. Let set for 30 minutes or place in a cold fridge to firm up faster.

6. Package up for gifts or store to serve as nibbles and treats. Enjoy!
