Chocolate & Banana Bread

This delicious cake/bread is a staple in our house, and the perfect way to use up bananas that are past their best.  Eat it for breakfast, as a snack, or afternoon tea.  Pop it in lunchboxes, or sneak a slice when you finally sit down in the evening.  Whenever you eat it, this delicious cake is sure to disappear very, very quickly...

Chocolate Banana Bread


250g plain flour
2 tspn baking powder
125g unsalted butter
250g caster sugar
4 ripe bananas, mashed
2 eggs, lightly beaten
1 tspn vanilla extract
175g chocolate drops


1. Grease and line a loaf tin, and pre-heat the oven to 180C.

2. In a mixing bowl, combine the butter, sugar, banana, eggs, vanilla extract and choc chips.

3. Sift in the flour and baking powder, then fold to combine.  Be careful not to over-mix the batter.

4. Pour the mixture into the prepared loaf tin and bake at 180C for 1 hour 15 minutes.

5. The loaf should be light brown with a slight crust.  Use a skewer to check it is fully cooked through.

6. Leave in the tin to cool for 5 minutes then turn out.  Store in an airtight tin for up to 5 days.

  2. Oh yummy. Will give this a go. I remember making Banana bread at school and everyone loved it :)

  3. It does give it a bit more wow with the chocolate drops, though my wife makes it without and it is still very tasty!
