Chocolate and Banana Bread Recipe

This delicious cake/bread is a staple in our house, and the perfect way to use up bananas that are past their best.

Eat it for breakfast, as a snack, or afternoon tea.  Pop it in lunchboxes, or sneak a slice when you finally sit down in the evening.

Whenever you eat it, this delicious chocolate and banana bread is sure to disappear very, very quickly...

Chocolate Banana Bread Recipe

Ingredients

250g plain flour
2 tspn baking powder
125g unsalted butter
250g caster sugar
4 ripe bananas, mashed
2 eggs, lightly beaten
1 tspn vanilla extract
175g chocolate drops

Method

1. Grease and line a loaf tin, and pre-heat the oven to 180C.

2. In a mixing bowl, combine the butter, sugar, banana, eggs, vanilla extract and choc chips.

3. Sift in the flour and baking powder, then fold to combine.  Be careful not to over-mix the batter.

4. Pour the mixture into the prepared loaf tin and bake at 180C for 1 hour 15 minutes.

5. The loaf should be light brown with a slight crust.  Use a skewer to check it is fully cooked through.

6. Leave in the tin to cool for 5 minutes then turn out.  Store in an airtight tin for up to 5 days.
